Vegetable Curry
It's all about the order of the cooking.

Hard veg first, then grade on fire by softness.

Re: Vegetable Curry
Good veggie curry should contain wholesome amounts of lentils & chickpeas followed by an ensemble of carrots, cauliflower, green peas, red/green onions and a healthy portion of spicy diced potatoes

My local does a lovely Vegetable Chasni

Spuds.

No veg curry is complete without the odd diced tater.

I used to live near Tooting Broadway. Next door to the Tooting Tavern is a Southern Indian restaurant. The waiter would come and get you from the pub when your table was ready, you took your beer with you and the waiters returned the glasses next morning. The food was also excellent.

What was also convenient was St. George's Hospital, 200 yards away, so if someone whacked you over the head with a chair you could get to A and E quite easily, then back for a curry afterwards.

Re: Vegetable Curry
I feel blessed.

I live about 200 yards away from a bar (that always has the football on), plus it doubles as a curry house. The chef there is fucking superb and it's probably the best Indian food I have ever had.

It's in Morden and called Blue Junction...worth a visit if ever in the area.

The lamb biriyani with a butter naan is the nuts.

3.80 a pint of Stella too.

Re: Vegetable Curry
Surely cheese and peas in a tomato sauce or a nice runny lentil curry are the way to go, served with a lamb vindaloo or rogan josh loaded with chilis?

I could stretch as far as bombay potatoes but after them there's no room left for a couple of pints.

Re: Vegetable Curry
to be fair chana masala is a side i often do along with tarka daal and mushroom bhaji.

The secret though is to have a good MEAT based main.

Re: Vegetable Curry
No,it's all about the first of the spices, ground freshly and put on a searing heat, followed by a turned down heat and onions tossed over to absorb said spices for approx 12-15 minutes first,

then you start adding other ingredients.

Gav - rasa was good back in the day. Just like Lahore/tayab etc. They just get popular and lazy. Moved this week to Greenwich so I'll miss my east end curry. But the parks and people seem nicer....
